I start looking for Popsicle sticks early. They are easier to find now than say 10 years ago. * dozen sticks (try a craft store if your grocery doesn’t carry them) * 10 - 12 granny smith apples * 2 bags of caramels * 1/4 cup smooth peanut butter * 1 - 2 tbs. water * 2 -3 cups chopped peanuts * wax paper Prepare your apples by washing them and drying them well. Push the sticks into the center core of the apple starting from the smaller end, so that the handle sticks out from the bottom of the apple. Pour the chopped nuts into a flat bowl or dish that will allow you to dip the caramel apple into it to coat with the peanuts, yet not touch the sides. Lay out a large piece of wax paper next to the peanuts and have both near the stove where you will be melting your caramels. It will be a little assembly line. You will dip the apple into the caramel, roll it into the nuts and place it on the wax paper. All of this must be done relatively quickly, being sure to stir your caramel mixture well between dippings. It is hard to be exact when making caramel apples, because the sizes of the apples vary, and the consistency of the caramel varies by each person’s taste. If you like thick caramel and lots of peanuts then of course buy extra. If you like a thinner caramel coating then you will be able to coat more apples. A traditional American Breakfast: A buttermilk pancake made with oats, butter and boysenberry syrup; just right hash browns with sausage cream gravy; one of each cooked well: sausage, bacon, small Hashbrowns ham slice; a glass of freshly squeezed orange juice; a glass of 1% milk (love the taste). I can’t eat eggs anymore, but a nicely buttered poached egg with lots of pepper would be delicious along with this. We went to a Mexican restaurant for breakfast and they gave me my Ultimate Traditional Breakfast along with chips and salsa and a plate of refried beans wtih melted cheese! Talk about awesome. Author: gloria . Comments: No Comments Christmas Wild Rice Wild Rice My mom brought this dish to a family Christmas dinner once and I have used it ever since for my Christmas dinners. She used the herb and butter rice mixes, but I like to get wild rice, and if I am in the mood, a brown rice as well. I never cook my wild rice as long as the package tells you to. I just don’t like it mushy. I let mine get to a nice tender chewy texture, which usually takes half the time. You must cook the brown rice separately, I usually boil all my rice, whatever the type may be, like I do my pasta. I love serving a sweet fruit salad to go with it, fresh asparagus or fresh green beans, biscuits, cream gravy and a family rice dish made with mushrooms, black olives, brown and wild rice. He loves seafood and wants to try to get me to eat it too. You see, I just met him less than a year ago and we have spent as much time as possible together, getting to know each other. Comments: No Comments Yams * Thanksgiving Yams 4 Fresh Yams * 3 tbs. real butter * 1/4 cup real maple syrup * 1/4 cup brandy * 1 bag tiny white marshmallows Wash and Cook the yams in the oven until they are tender. Slice them up in a buttered casserole dish, skin on. Drizzle the maple syrup and brandy over the potatoes and dollop the butter on top. Sprinkle the marshmallows over it all covering it well. Return it to the oven and bake in a moderate oven until the marshmallows are slightly melted and golden brown. Yummmmy!!
